Psalm 92:12
"But the godly will flourish like palm trees and grow strong like the cedar of Lebanon."

 
Dates are a fruit of a tall palm tree known as the date palm.  When David was a shepherd, writing songs and prayers to God, he wrote about the palm tree.  In ancient times, the date palm was a symbol of moral uprightness and heavenly prosperity.  Date trees flourish in arid regions where it looks like they can't possibly survive, but they require little or no care.  For the people who live in the Middle East or Africa, dates are the staff of life.  In the United States, dates are grown in California, Arizona, and Texas.
 
Figs date back to the Garden of Eden and is the second fruit recorded in the Bible.  When Adam and Eve ate of the forbidden fruit and knew their nakedness, they covered themselves with fig leaves.  To sit under one's fig tree was the Jewish concept of peace and prosperity.
 
I Kings 4:25  "Judah and Israel dwelt safely, every man under his vine and fig tree from Dan to Beersheba all of Solomon's days."
 
Figs are grown in Asia Minor, Greece, Turkey, and Italy.  All figs in the U.S. are grown in California and Texas.
 
Date and fig juice can be used for insomnia - when carbohydrate-rich foods are keeping you awake.  Dates and figs can also be used for coughing and wounds.  Use figs for constipation.
 
Figs may be added to water for sore throat aid.  Use 4 TBLSP of figs to a cups of water.  Boil, strain, cool, and drink the liquid or use as a gargle.

Fig Fudge

1/4 cup toasted sunflower seeds

1 cup chopped dates

8 - 10 large figs, chopped

1/4 tsp Vitamin C crystals

2 TBLSP toasted sunflower seeds

Place the 1/4 cup of sunflower seeds in a food processor and process briefly.  Add the dates, figs, and Vit. C crystals.  Process until well-chopped and mixture forms a ball atop the metal blade.  Press mixture into a loaf pan.  Press additional sunflower into top.  Chill until needed.

Banana - Date - Fig - Yogart Shake

1 cup apple juice

1/2 tsp pure almond extract

1/2 cup plain yogart

3 ripe bananas - peeled and broken in half

1/4 cup pitted dates

1/4 cup figs

2 TBLSP unsweetened coconut flakes

1/2 tsp powered cardamon

2 cups ice cubes

Place all ingredients in blender.  Blend on high speed until smooth.  Serve immediately.  Yield: 4 1/3 cups

Date Pecan Roll

2 cups pecans

1 cup dates, pitted

1 tsp lemon rind

1 TBLSP orange rind

1 tsp Braggs

1 cup coconut, shredded

Put pecans into a processor with 'S' blade and chop.  Add dates, rind, and Braggs.  Blend until combined, but not mushy.  Form into log shapes and roll in coconut.  Store in refrigerator as a sweet treat.
