Asparagus
 
When growing up, we would pick wild asparagus and thought that it was the best thing we had found.  We called it wild, but maybe someone living on our place before us had planted it.  It didn't matter; it was good.
 
Asparagus is from Europe and Asia.  There are now several species grown all over the world.
 
Asparagus contains calcium, phosphorus, sodium, potassium, Vitamin A, niacin, and Vitamin C.  It also contains asparagine, which enables the body to rid itself of toxic waste.
 
 
Some of the things asparagus can be used for:
 
Acne
Acne is an acid build-up in the blood from a poor diet, or complications from something else going on in the body.  Asparagus juice can reverse this condition in a short time if a poor diet is corrected.  Asparagus is high in alkaline, which is what the body needs.
 
Eczema
Eczema can be caused from emotional stress, or a mental or nutritional deficient diet.  Any of these problems can make the body acid.  Because of the amount of mineral salts found in asparagus, these conditions can be corrected.  As asparagus juice passes through the system, it will detoxify the body and bring it back to an alkaline balance.  Then the kidneys will begin to function properly again.
 
If you eat alot of meat, fat, sweet foods, soft drinks, colas, and coffee, your body may be too acid, also.  Again, drinking aspargus juice can bring you back into an alkaline balance.

Asparagus Juice

Process 8 asparagus stems in juicer.

Makes 1/2 cup.

Add a low-sodium vegetable or tomatoe juice (Do not use a sweet vegetable like carrots.)

Cream of Asparagus Soup

6 cups fresh asparagus

2 TBLSP butter or margarine

1 cup sliced yellow onion

2 stalks celery, diced

1 3/4 cups chick broth

1 tsp each dried mint leaves and marjorum leaves

1/2 tsp salt

1/4 tsp black pepper

1 cup milk (or soy milk)

3 TBLSP arrowroot or tapico starch (flour can also be used)

1.  In a large saucepan, melt butter, add onion and celery, and cook 5 min.  Add asparagus, chicken broth, mint, marjorum, salt and pepper.  Bring to boil.  Lower heat and simmer, covered, for 5 min.  Cool slightly.

2.  In a food processor or blender, (half at a time), process aspargus mixture until smooth.  Return mixture to saucepan.  Whisk together milk and thickener, and whisk into asparagus mixture.  Return to heat, stirring until thickened.  Makes 4 servings.
